 1. Bun rieu

  • 500g crab
  • 200g tofu
  • 200g fish cakes

Instructions:

  • Preparation:
      • Wash the crab, separate the crab meat and crab roe.
      • Wash the tofu, cut into small pieces.
      • Cut the fish cakes into bite-sized pieces.
      • Wash the fresh herbs, drain.
  • Making soup:
      • Add the crab to a pot, cover with water, bring to a boil.
      • Remove the crab, scoop out the crab meat, pound until smooth.
      • Add the crab meat to the crab water, add a little salt, fish sauce, bring to a boil.
      • Add the crab roe to the soup, stir well.
      • Add the tofu to the soup, bring to a boil.
      • Season with seasonings to taste.
  • Cooking fish cakes:
      • Heat oil in a pan, sauté the shallots until fragrant.
      • Add the fish cakes, cook until golden brown.
  • Presenting the dish:
    • Put the rice vermicelli in a bowl, pour the soup, add tofu, fish cakes, crab roe, fresh herbs and shrimp paste.

  • 100g meatballs
